We were recently invited by Sophia Lee of Abbondanza Pizzeria Ristorante to visit their new branch at SM Mall of Asia and sample some of their menu. We were warmly greeted by the owners who were quick to inform us that they had prepared a sample of their best menu. I was immediately drawn to the glass window which revealed the kitchen, where the crew was already preparing our feast for that night. Malapascua is a tiny island off the north tip of Cebu in the Philippines. It’s about 2 sq. km. in size with a population of a little over 3,000. The island was first known for its white sand beach and crystal blue water which attracted a lot of local tourists.
